Veggie burgers
Prep time: 15 minutes
Cook time: 10 minutes
1/2 cup each: chopped walnuts, hazelnuts, slivered almonds and roasted, salted sunflower seeds*
3/4 cup chopped onion
1 1/2 teaspoons smoked sea salt
2 cloves garlic
1 (15-oz.) can small white beans, rinsed and drained
2 eggs
Freshly ground pepper to taste
Olive oil or olive oil cooking spray
Lettuce, tomato, burger buns (or your favorite burger toppings)
Place all ingredients except cooking spray and toppings in a food processor. Pulse on and off until mixture is fairly smooth with some chunks remaining. (Don’t overdo it or mixture will be too soft.)
Shape into patties and spray liberally with cooking spray. Cook in a large nonstick skillet over medium heat for 5 minutes on each side or until lightly browned. Serve on toasted buns with lettuce, tomato and any desired condiments. Makes 8 servings.
