White Chicken Chili

Prep time: 15 minutes

Cook time: 40 minutes

1 (16-oz.) package lean ground turkey

1 medium onion, peeled and chopped

1 cup green chile salsa

1 (4-oz.) can diced green chiles

1 (15-oz.) can small white beans, rinsed and drained

1 1/2 cups chicken stock or reduced-sodium broth

1 1/2 teaspoons ground cumin

1 teaspoon dried oregano leaves

1 teaspoon arbol chili powder, or to taste

Salt and pepper to taste

2 cloves minced garlic

Tortilla chips, diced avocado and cilantro leaves (optional toppers)

Crumble turkey into a large pot; add onion and sauté for 10 minutes. Add all remaining ingredients except toppers to pot and bring to a boil. Reduce heat and simmer, covered, for 30 minutes. Ladle into bowls and add a spoonful of dip to the top of each. Serve with any desired toppers. Makes 6 servings.
