Sweet and Tangy Pulled Pork
Prep time: 15 minutes
Cook time: 5 to10 hours
3 to 3 1/4 lbs. boneless pork sirloin roast, cut into 1 1/2-inch cubes
2 tablespoons prepared BBQ rub or seasoning, or to taste
2/3 cup prepared barbecue sauce
1/2 cup Bonne Maman Peach Mango, Peach or Apricot Preserves
1/2 cup cider vinegar
1/4 cup chicken broth
1 tablespoon liquid smoke
1 1/2 cups coarsely chopped onion
Hawaiian sweet rolls, French rolls, pretzel rolls or other desired rolls
Prepared coleslaw
Place pork in a slow cooker and stir in barbecue sauce, preserves, vinegar, broth and liquid smoke. Add onion and stir again. Cover and cook on HIGH for 5 hours or on low for
10 hours or until meat is shreds easily. Shred with 2 forks and transfer to a large saucepan. Cook over medium-high heat for 5 to 10 minutes or until excess liquid has cooked off. Serve on desired rolls with coleslaw, if desired. Makes 8 servings.
