Sweet Thai Chili Turkey Meatloaf

Cook time: 1 hour

Meatloaf:

1 (20-oz.) package lean ground turkey (or 1 1/4 lbs. lean ground beef)

2/3 cup panko breadcrumbs

1/4 cup Thai sweet chili sauce

1/4 cup each: chopped bell pepper, chopped water chestnuts and sliced green onions

2 tablespoons chopped fresh cilantro

1 1/2 tablespoons soy sauce

2 teaspoons minced fresh ginger

1 egg

Topping:

2 tablespoons ketchup 

1 tablespoon Thai sweet chili sauce

Preheat oven to 350°F and spray a shallow baking dish with nonstick cooking spray. Mix together all meatloaf ingredients in a medium bowl until well blended. Shape into a loaf and place in prepared dish. Stir together ketchup and chili sauce and drizzle over meatloaf. Bake for 1 hour. Makes 4 to 6 servings.

Recipe tip: To serve as an appetizer, roll into 1-inch balls and brush with topping; bake for 30 minutes.
