Lunchbox Enchiladas

Assemble ahead and microwave when ready to eat. 


Place several layers of enchilada sauce, torn pieces of corn tortilla, shredded Mexican blend cheese and cooked shredded chicken in a microwave-safe bowl. Cover and refrigerate until lunchtime. Vent container and microwave for several minutes or until very hot.
