Greek Lemon Skewers

Add a hit of color by garnishing with snipped fresh parsley or oregano. 

Prep time: 15 minutes

Cook time: 6 to 8 minutes

Chill time: at least 1 hour

1 lb. chicken tenders or small strips chicken breast

1/4 cup extra virgin olive oil

1/4 cup lemon juice

1 teaspoon Greek seasoning

Sugar, salt and pepper to taste

2 tablespoons finely diced Kalamata olives and roasted red peppers

Crumbled Feta Cheese (optional)

Cook chicken on a well-oiled grill over medium-high heat for 3 to 4 minutes on each side or until cooked through; set aside to cool. Whisk together olive oil, lemon juice and seasonings in a small bowl. Transfer to a large resealable bag and add chicken to bag; seal bag and squeeze gently to coat chicken with marinade. Refrigerate for at least 1 hour. Thread chicken onto skewers and place on a platter. Sprinkle with olives, peppers and cheese. Makes 4 main dish or 8 appetizer servings.
