BBQ Nutburger Sliders

These vegan burgers are so tasty and packed with all good ingredients. You won’t miss the meat!

 

Prep time: 20 minutes  

Chill time: at least 30 minutes

Cook time: 10 minutes

 

1/3 cup Chobani Plain Oat Milk

2 tablespoons ground flaxseed meal (slightly heaping)

1/2 cup each: coarsely chopped walnuts, cashews, smoked almonds,  

      chopped onion and minced celery

1 cup cooked brown rice

2/3 cup roasted salted sunflower seeds

1 tablespoon barbecue seasoning

1/2 teaspoon smoked sea salt

1 (15-oz.)  can kidney beans, rinsed, drained and patted dry between

     paper towels

Olive oil or olive oil cooking spray

Small buns or slider rolls

Lettuce, tomato, red onion and barbecue sauce

 

Place nuts in a food processor and pulse to very coarsely chop. Add rice, sunflower seeds, onion, seasonings, beans and eggs to food processor. Pulse on and off until mixture is fairly smooth with some chunks remaining. Stopping frequently to lift the smoother mixture from the bottom to the top with a rubber scraper. (Don’t over process or mixture will be too soft.) Spread on a baking sheet and let chill for at least 30 minutes to firm mixture up. Shape into 1/4 cup patties and place on a baking sheet; spray liberally with cooking spray. Cook in a large nonstick skillet or grill on heavy duty foil over medium heat for about 5 minutes on each side or until lightly browned. Serve on toasted buns with lettuce, tomato and any desired condiments.
