Smokey Grilled Carrot Dogs

Skip the hot dogs and go vegetarian! Marinating the cooked carrots in this smokey marinade adds meaty flavor without the meat.

Prep time: 15 minutes

Marinate time: several hours or overnight

Cook time: 25 minutes

 

Smokey Yogurt Marinade

1/4 cup cider vinegar

1/4 cup Chobani Plain Greek Yogurt

2 tablespoons pure maple syrup

1 tablespoon smoked paprika

1 tablespoon spicy brown mustard

1 teaspoon each: garlic salt and onion powder

1/4 teaspoon cayenne pepper

1/2 teaspoon liquid smoke (optional)

Carrot Dogs:

6 large carrots, peeled and ends trimmed

Cooking spray

Hot dog buns

Thinly sliced red onion and mustard

 

Whisk together all marinade ingredients in a small bowl. Transfer to a zip lock bag. Simmer carrots in boiling water in a very large skillet for 15 minutes or until very tender. Let cool and add to marinade. Seal bag and refrigerate for several hours or overnight. Cook over high heat for 5 minutes or until carrots are nicely charred. Transfer to a piece of heavy duty foil and pour marinade over the top. Reduce heat to low and let cook for 10 minutes more, turning occasionally.

 

Recipe tip:

Piercing the larger end of the carrots with a small sharp knife during simmering will help to cook them evenly.
