Easy Weeknight BBQ Pork
This is a great make ahead recipe. Cut down on the cook time by using and instant pot, or cook overnight in a slow cooker.
Prep time: 20 minutes
Cook time: about 2 hours
2 lbs. boneless pork shoulder or butt or country-style ribs
1/2 cup prepared smoky barbecue sauce
3/4 cup chicken broth
1/3 cup cider vinegar or to taste
1/2 cup raisins
1 medium onion, coarsely chopped
Garlic salt to taste
Soft French rolls or twice baked potatoes
Crumbled blue or Gorgonzola cheese (optional)
Cut pork into 2-inch chunks. Cook in a large saucepan over medium-high heat until pork is browned on all sides. Add remaining ingredients and bring to a boil. Reduce heat and simmer, covered, for 1 1/2 hours or until meat shreds easily with a fork. Let cool slightly, then shred using 2 forks. Season with garlic salt. Serve on soft rolls, or over twice baked potatoes with cheese, if desired. Makes 6 to 8 servings.
