Easy Pork Carnitas

Prep time: 15 minutes

Cook time: about 1 1/2 hours


1 lb. pork sirloin or shoulder, cut into 4 pieces

1 teaspoon chili powder

1/2 teaspoon each: salt, pepper and ground cumin

1/2 cup chopped onion

1 tablespoon chili garlic paste

2 cloves garlic, minced

1 orange, cut into 4 pieces

3/4 cup beer

Tortillas, cilantro leaves, guacamole

Place pork in a medium saucepan and season with salt, pepper and cumin. Place the onion, chili paste, garlic and orange around the pork and pour beer over the top. Cover tightly and bring to a boil. Reduce heat and cook over low heat for 1 to 1 1/2 hours or until pork shreds easily with 2 forks. Remove cover and remove oranges; cook uncovered until excess liquid has cooked off. Serve in tortillas with cilantro and guacamole.
