Speed Scratch Peanut Butter Banana Muffins

These muffins come together in no time since the key ingredient is pancake mix.

Mashed bananas add flavor and nutrition making them a perfect back to school breakfast or after school snack.

 

Prep time: 10 minutes

Cook time: 20 to 25 minutes

 

2  cups complete pancake and waffle mix

2/3 cup Chobani Oat Milk (any variety)*

1/2 cup sugar

1/3 cup mashed banana

1/4 cup peanut butter

1/4 cup vegetable oil

1 teaspoon vanilla extract

2 eggs, beaten

Chopped peanuts (optional)

 

Preheat oven to 375°F and line 12 muffin cups with paper liners. Stir together pancake mix, oat milk, sugar, banana, peanut butter, oil, extract and egg in a medium bowl. Spoon into prepared cups and sprinkle with almonds, if desired. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.

 

*For a sweeter muffin, use Chobani Sweet Cream or Oat Creamer.
