Eggy English Muffin Pizzas
1/3 cup Chobani Oat Milk
1/4 teaspoon Italian seasoning blend
1/4 teaspoon garlic salt
1/8 teaspoon pepper
3 Happy Egg Company Organic Cage Free Eggs
3 English muffins, split
3/4 cup shredded Mozzarella cheese
Small slivers bell pepper, red onion or any other favorite pizza toppings
Real bacon bits (optional)
Grated Parmesan cheese (optional garnish)
Preheat oven to 400°F and line a large baking sheet with parchment paper or foil. Beat together oat milk, seasonings and eggs in a liquid measuring cup. Place muffin halves cut side up on baking sheet and top each with 2 tablespoons mozzarella cheese. Carefully pour egg mixture evenly over each muffin, going very slowly so that it has time to soak in. Add any desired vegetables and sprinkle with bacon bits. Bake for 10 to 12 minutes or until lightly browned on top. Finish with Parmesan cheese, if desired. Makes 6 pizzas.
