Quick Butternut Tomato Soup

Prep time: 15 minutes

Cook time: 35 minutes

 

2 tablespoons butter

2/3 cup minced onion

1/3 cup minced celery

1 cup chicken or vegetable broth

1/4 cup cooked crumbled bacon

1/2 teaspoon dried thyme

1 (25.5-oz.) jar butternut squash pasta sauce

Sour cream, fresh thyme and freshly ground pepper (optional toppings)

 

Melt butter in a medium saucepan over medium heat. Add onion and celery and cook for 5 minutes. Stir in broth, bacon, thyme and pasta sauce and bring to a boil. Reduce heat and simmer, covered, for 30 minutes. Spoon into soup bowls or mugs and top with sour cream and thyme. Makes 4 servings.
