Tonnino Tuna Sliders
One package of tuna mixed with rice, beans and seasonings make the perfect healthy slider. Serve as a light dinner or as an appetizer.

Cook time: about 6 minutes
1 (4.5-oz.) package tuna fillets in water, drained
1/3 cup garbanzo beans, rinsed and drained
1/2 cup crushed croutons, divided
1/3 cup cooked rice (brown or white)
2 teaspoons lemon juice
1 egg
1 green onion
Lemon or plain sea salt and pepper to taste
1 tablespoon olive or canola oil
8 mini burger buns, lettuce and tomato
Place tuna, garbanzo beans, 1/4 cup croutons, rice, lemon juice, egg and green onion in a small food processor. Pulse on and off to finely chop all ingredients. Season with sea salt. Using wet hands, shape into 8 small patties and roll in remaining croutons. Heat oil in a medium nonstick skillet over medium heat. Add burgers and cook for a few minutes on each side or until golden brown, adding additional oil to skillet if necessary. Serve in buns with lettuce and tomato. Makes 4 servings.
