Simple Marinara Sauce

Prep time: 10 minutes

Cook time: 1 hour


1 tbsp. extra virgin olive oil 

1 medium onion, chopped

2 cloves garlic, minced

1 (28-oz.) can diced tomatoes (preferably San Marzano)

1/2 cup hearty red wine (optional)

2 teaspoons Italian herb seasoning blend

1/2 teaspoon sugar

1/2 teaspoon sea salt

1 bay leaf

Freshly ground pepper to taste

Heat olive oil in a medium saucepan over medium heat. Add onion and garlic and cook for 5 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer, covered, for 1 hour, stirring occasionally. Add a little water to taste if you prefer a thinner sauce, or cook uncovered to thicken to use as a pizza sauce.  Makes 4 to 6 servings.
