Simple Chicken and Dumplings

Cook time: 40 minutes


2 tablespoons butter

1 large onion, chopped

1 1/2 cups sliced celery

1 1/2 cups sliced carrots

1 1/2 cups corn

1 1/2 teaspoons dried thyme or herbes de Provence

1/2 teaspoon poultry seasoning

3 (12-oz.) jars chicken gravy

1 lb. boneless, skinless chicken breasts, cubed

1 can refrigerated biscuits

Melt butter in a wide stockpot over medium heat. Add onion and cook for 5 minutes. Add celery and carrots and cook for 5 minutes more. Stir in corn, herbs, and chicken and bring to a boil. Reduce heat and cook, covered, for 20 minutes. Tear each biscuit into 3 pieces and drop onto the surface of the stew. Cover and cook for 15 minutes more. Makes 6 servings.
