Salmon

Prep time: 10 minutes

Cook time: 20 minutes


1 cup fresh blackberries

2 tablespoons white balsamic vinegar

1 tablespoons honey

4 (6-oz.) salmon fillets

Sea salt and pepper to taste

1/4 cup snipped fresh basil

Lemon wedges (optional)

Place blackberries, vinegar and honey in a small bowl. Using kitchen shears, coarsely chop berries. Season with sea salt.  Season salmon with salt and pepper. Grill for about 3 minutes on each side or broil for 5 minutes or until salmon is cooked to you liking. Place on a platter and top with blackberry  mixture. Sprinkle with basil. Serve with lemon wedges.
