Lemony Fig Chicken

A jar of top quality fig spread gives this recipe great flavor with minimal ingredients. It’s a great quick weeknight meal but nice enough for entertaining.

 

Prep time: 10 minutes

Marinate time: Several hours or overnight

Cook time: 10 minutes

 

1/4 cup Dalmatia Fig Spread

3 tablespoons lemon juice

2 tablespoons minced red onion

1 1/2 tablespoons extra virgin olive oil

1 teaspoon sea salt

2 large stems fresh basil, coarsely torn

Freshly ground pepper to taste

2 small to medium boneless, skinless chicken breasts

Serve with:

Creamy polenta

Lightly dressed arugula

Snipped fresh basil

Finely grated lemon zest

 

Place fig spread, lemon juice, onion, olive oil, salt, basil and pepper in a medium resealable bag. Squeeze bag to mix, then place chicken in bag. Seal and marinate for several hours or overnight (the longer the marinade, the more the flavor). Remove from marinade and discard bag. Cook on a well-oiled grill over medium-high heat for 5 minutes on each side or until cooked through. Serve over polenta with arugula, basil and lemon zest. Makes 2 servings. Recipe may be doubled.
