Curried Chicken and Red Lentils

Cook time: 35 minutes


1 tablespoon olive oil

1 cup chopped onion

4 small skinless chicken breasts or 8 boneless chicken thighs

1/2 cup chopped carrot

1/2 cup chopped celery

3 cups chicken broth

1 cup red lentils

1 (12.5-oz.) jar Madras or Kashmiri Curry Indian Simmer Sauce

 in a large pot over medium-high heat. Bring to a boil and simmer, covered, for 20 minutes. Add; cover and cook for10 minutes more. 

Makes 4 servings.
