ICE CREAM SANDWICHES
The Basics:
1. For each sandwich, start with 2 cookies (soft cookies are best).
2. On one cookie, spread the fudge, peanut butter, caramel or jam.
3. Use a large spoon to scoop slightly softened ice cream onto the other cookie, pressing it out towards the edges
4. Close the sandwich, and roll the edges dip in melted chocolate or simply roll the edges in chopped nuts, mini chocolate chips, decorative sprinkles or toasted coconut, if desired
Chocolate Cherry
Chocolate cookie + fudge topping + vanilla ice cream + chopped maraschino cherries + mini chocolate chips or chocolate sprinkles.
Chocolate Mint
Chocolate cookie + fudge topping + mint chip or Moose Tracks Glacier Mint ice cream + chocolate sprinkles.
Mocha
Chocolate cookie + fudge topping + a small sprinkle of instant espresso powder + vanilla or coffee ice cream + mini chocolate chips.
PB & C
Peanut butter cookie + fudge topping + chocolate or Moose Tracks ice cream.
Double Peanut Chocolate
Chocolate cookie + peanut butter + vanilla or Peanut Butter Swirl ice cream + chopped peanuts
Maple Molasses
Maple cookie + caramel topping + maple pecan ice cream + chopped walnuts.
Brownie Cookie Cream
Brownies + cookies and cream ice cream + chopped toasted nuts.
Caramel Pretzel
Sugar cookie + caramel topping + Caramel Pretzel Swirl ice cream. Roll in crushed pretzels.
Chocolate Covered Strawberry
Sugar cookie + strawberry preserves + strawberry ice cream. Dip half the cookie in melted ice cream.
Cookie Chocolate Cookie
Chocolate or chocolate chip cookie + cookie dough ice cream. Roll in mini chocolate chips or dip half the cookie in melted chocolate.
Berry Sprinkle
Sprinkle sugar cookie + berry preserves + strawberry or Berry Cheesecake ice cream + rainbow sprinkles.
Chewy Berry Sprinkle
Same as above, but using rice krispy squares.
The Tips:
The ice cream should be just lightly softened, not rock hard. If it’s too soft, it will start to melt and if it’s too hard, it will be difficult to mound evenly on the cookie, and could break the cookie too. To soften, leave in the refrigerator for 15 to 30 minutes.
Spread the sauce on one cookie, and the ice cream on the other. It’s difficult to spread the ice cream on a slippery surface.
If dipping the sandwich in melted chocolate, it’s best to freeze it until it’s very firm before dipping, to prevent melting the ice cream. Use melted chocolate not fudge topping that will stay sticky.
