Yogurt and Oat Milk Mashed Potatoes

Prep time: 10 minutes

Cook time: 10 to 12 minutes

 

3/4 cup Chobani Oat Milk, divided

1 1/2 lbs. russet potatoes, peeled and cubed

2 tablespoons butter

1/4 cup Chobani Plain Greek Yogurt

1/2 teaspoon sea salt

Freshly ground pepper to taste

 

Place potatoes in a large glass bowl. Add 1/4 cup oat milk and cover with plastic wrap; pierce with a small sharp knife to vent. Microwave on HIGH for 10 minutes or until potatoes are soft. Mash with butter, then add remaining oat milk, yogurt, salt and pepper. Makes 4 servings.
