Creamy Cilantro Rice

Cooking the rice in a mixture of oat milk and broth adds great flavor and texture to this simple side.

 

Prep time: 15 minutes

Cook time: 25 minutes

 

1 cup Chobani Oat Milk

1 cup long grain rice

3/4 cup chicken or vegetable broth or stock*

1/2 cup chopped onion

2 tablespoons butter

1 teaspoon garlic salt

1/4 cup chopped fresh cilantro

Optional extras:

1/2 cup fresh corn kernels, grilled or sautéed

1 large poblano pepper, roasted, peeled and chopped

 

Place oat milk, rice broth, rice, onion, butter and salt butter in a medium saucepan. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork and stir in cilantro. Makes 6 servings.

 

*Check package directions for the amount of liquid needed to cook the rice. If it calls for 2 cups, use 1 cup of stock or broth.
