Crispy Citrus Chipotle Chicken Wings

Prep time: 15 minutes

Marinate time: several hours or overnight

Cook time: 20 minutes

 

1 cup Chobani plain Greek Yogurt

2 tablespoons Cindy Lynn’s Citrus Chipotle Rub

1 pound boneless skinless chicken breasts, cut into small, 2 to 3-bite strips

1 1/2 cups panko breadcrumbs

6 tablespoons grated Parmesan cheese (optional)

Cindy Lynn’s Duck Fat Cooking Oil Spray or olive oil cooking spray

 

Stir together yogurt and chipotle rub in medium bowl. Add chicken and stir well to coat. Cover and refrigerate for several hours or overnight for best flavor. (The longer the marinate time, the more tender and flavorful the chicken will be.)

Preheat oven to 400°F and line a large baking sheet with parchment paper or foil coated liberally with cooking oil spray. Stir together breadcrumbs and Parmesan in a medium bowl. Remove chicken from yogurt mixture scraping off the excess on the side of the bowl. Add to bowl with breadcrumb mixture and turn to coat both sides, pressing into the surface to coat well. Place on prepared baking sheet and sprinkle with any  remaining breadcrumb mixture, pressing into the surface with your fingers. Coat liberally with cooking oil spray and bake for 10 minutes. Coat with cooking oil spray again and cook for 10 minutes more or until golden brown and crisp. Serve warm.

 

Recipe tip:

For a flavorful guacamole, stir a little yogurt into mashed avocado and season to taste with additional Cindy Lynn’s Citrus Chipotle Rub.
