Peanut Butter Yogurt Fruit Dip

Place in small cups and serve with apple or orange slices for dipping. It’s a great, healthy soccer snack.

 

2 cups Vanilla Greek Yogurt

1/4 cup creamy or crunchy peanut butter*

 

Stir together yogurt and peanut butter in a large bowl. Transfer to small containers with lids. Store in the refrigerator until ready to serve. May be prepared several days ahead. Pack with small zipper seal plastic bags of fruit slices.

 

*For schools that require no peanuts, almond butter may be used instead.

Nut Butter Apple Spread

Prep time: 5 minutes

1 cup creamy almond or peanut butter

1/2 cup finely chopped apple

2 tablespoons honey

1/4 teaspoon cinnamon

 

Stir ingredients together in a small bowl. Press plastic wrap tightly against the surface and refrigerate until ready to use. Use within 3 days. Spread on naan bread mini dippers or use as a dip for graham cracker sticks. Makes 8 servings.

Asian Chicken Salad

Place shredded tri color coleslaw blend in a bowl. Top with cooked, shredded chicken, sliced green onion and chopped apple. Toss with an Asian vinaigrette and sprinkle with toasted slivered almonds and cilantro, if you like.

Variation: Roll up in a flour tortilla to make a wrap.

Mexican Chicken Apple Salad

Place chopped romaine in a bowl. Top with shredded chicken, sliced green onion and chopped apple. Sprinkle with Mexican seasoning blend and toss with a vinaigrette dressing. Top with cilantro, if you like.

Variation: Roll up in a flour tortilla to make a wrap.
