Pumpkin, Bacon and Brie Mashed Potatoes

Prep time: 15 minutes 

Cook time: 20 to 25 minutes

3 lb. red or Yukon Gold potatoes, cut into 1 1/2-inch cubes

3/4 cup vegetable broth

1/2 cup canned pumpkin

3 tablespoons butter

2 tablespoons chopped fresh rosemary

8 oz. Brie, outer rind removed and cubed

1/2 teaspoon sea salt

Freshly ground pepper to taste

6 strips crisp, cooked bacon, coarsely crumbled

Place potatoes and broth in a microwave-safe bowl. Cover with plastic wrap and cut a small slit in the top to vent. Microwave on HIGH for 20 minutes or until potatoes are tender. Mash well, then stir in pumpkin, butter, Brie, rosemary, salt and pepper, adding additional broth if potatoes are too stiff. Lightly stir in bacon and microwave for 2 to 3 minutes more to heat through. Makes 8 servings.
