Maple Pear Yams

2 1/2 pounds mixed white flesh sweet potatoes and orange flesh yams
1 (15-oz.) can juice packed bartlett pear halves
3 tablespoons butter
3 tablespoons pure maple syrup
1 teaspoon cinnamon
1/2 cup sliced almonds
Pierce yams and place on a large microwave-safe plate. Microwave on HIGH for 10 minutes or until about half cooked. Set aside to cool for at least 30 minutes (may be refrigerated overnight). Peel potatoes and cut into large cubes. Preheat oven to 375°F. Drain pear juice into a small saucepan and set aside. Cut each pear half into 4 pieces. Layer yams and pears in a small, shallow baking dish. Add butter, maple syrup and cinnamon to pear juice and cook until butter is melted. Drizzle over yams and pears. Bake at 375°F for 15 minutes. Sprinkle with almonds and bake for 20 minutes more or until almonds are toasted. Makes 6 to 8 servings.
