Ginger Orange Glazed Carrots

Prep time:  10 minutes

Cook time: about 30 minutes 


1 1/2 cups orange juice

3 tablespoons honey

1 tablespoon minced ginger

2 lbs. carrots, peeled and cut into 3/4-inch diagonal slices

Sea salt and pepper to taste

Chopped fresh parsley (optional garnish)


Stir together juice, honey and ginger in a large saucepan. Stir in carrots and bring to a boil over medium-high heat. Reduce heat and simmer, covered, for 15 minutes or until carrots are tender. Remove cover and cook over medium-high heat until excess liquid has cooked off and carrots are nicely glazed. Season with salt and pepper. (May be prepared several days ahead and stored tightly covered in the refrigerator.) Garnish with parsley, if desired.

Makes 8 servings.
