Creamy Italian Corn

1 tablespoon First Street or Sun Harvest Organic Butter
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup chopped zucchini
2 (15.25-oz.) cans First Street or Sun Harvest Organic Corn
3/4 to 1 cup cup Creamy Parmesan Sauce (recipe follows)
1 teaspoon First Street or Sun Harvest Organic Italian Seasoning
1/4 teaspoon First Street Garlic salt, or to taste
Pepper to taste
Melt butter in a medium saucepan over medium heat. Add onion and cook for 5 minutes.
Add bell pepper and zucchini and cook for 5 minutes more. Add corn and cook until hot. Stir in Parmesan Sauce, Italian seasoning, garlic salt and pepper; cook until heated through. Makes 6 to 8 servings.
Creamy Parmesan Sauce

4 tablespoons butter
2 cloves garlic, minced
1/4 cup flour, divided
1 1/2 cups Chobani Oat Milk
2/3 cup vegetable or chicken broth
1 1/3 cups shredded Parmesan cheese
1/2 teaspoon sea salt or to taste
Freshly ground pepper to taste
Melt butter in a medium saucepan over medium heat. Add garlic and cook for 1 minute stirring constantly. Add 3 tablespoons flour; cook and stir for 1 minute more. Slowly whisk in oat milk and broth. Cook, whisking constantly, until mixture is thickened and bubbly; reduce heat to low. Toss cheese with remaining tablespoon of flour. Add a small handful at a time to the sauce, whisking until smooth and melted before adding more. Season with salt and pepper.
