Buttermilk Mashed Potatoes

2 lbs. each: Yukon Gold and red potatoes, cut into large cubes
1 1/2 cups buttermilk
1/2 cup butter
2 teaspoons garlic salt, or to taste
2 (6.5-oz.) packages soft garlic & herb soft spreadable cheese
Freshly ground pepper to taste
3 tablespoons snipped fresh chives
Place potatoes in a large pot fitted with a steamer basket and add 1-inch of water to pot. Cover and steam for 15 to 20 minutes or until potatoes are tender when pierced with a fork. Transfer to a large bowl and mash well. Stir in buttermilk, butter, garlic salt, cheese and pepper. Stir in chives. Makes 8 to 10 servings.
Make ahead tip: May be prepared up to 2 days ahead and stored tightly covered in the refrigerator. Microwave until hot, adding additional buttermilk or milk to thin if necessary.
