Baked Tofu Buffalo Fries

1 (12-oz.) package extra firm tofu
1/2 cup buffalo wing sauce
1 egg, beaten
1 cup panko breadcrumbs
1/4 cup finely chopped walnuts
1 teaspoon garlic salt
1 teaspoon onion powder
Olive oil cooking spray
Cut tofu into 12 equal long pieces and place between several layers of paper towels to remove excess moisture. Let stand for 30 minutes. Place buffalo wing sauce in a shallow dish. Place egg in another shallow dish. Place breadcrumbs, walnuts and seasonings in a third shallow dish. Place tofu in dish with buffalo sauce and turn to coat all sides; let stand for 30 minutes. Preheat oven to 400°F and coat a baking sheet with foil. Coat with cooking spray. Roll each tofu strip in egg, then breadcrumb mixture and place on baking sheet. Coat liberally with cooking spray. Bake for 10 to 15 minutes or until the outside is crisp and golden brown. Serve warm with additional buffalo sauce. Makes 4 servings.
