Peach Pecan Butter

Prep time: 10 minutes

Cook time: 15 minutes

Cool time: 15 minutes

Makes: about 1 cup

1 cup peeled, pitted and sliced peaches

1/2 cup butter, softened

1/4 cup finally chopped pecans

2 tablespoons each: brown sugar and honey 

1/4 teaspoon cinnamon. 


Mash peaches and place in a small saucepan set over medium heat. Simmer for 15 minutes, stirring frequently, or until all excess liquid has cooked off. (Stir constantly and reduce heat slightly when mixture becomes fairly dry to avoid scorching.) Let cool, then stir in butter, pecans, brown sugar or honey and cinnamon. Spread over toast, biscuits or pound cake or use as a filling for cinnamon rolls.
