Fig Bacon Jam
This shortcut bacon jam will be one of your new favorite recipes. It adds just the right flavor and texture to your grilled cheese sandwiches. Add fig bacon jam and a fried egg to your grilled cheese sandwich for the ultimate bacon and egg grilled cheese!

Cook: 40 minutes
1 lb. good quality bacon, chopped
1 very large onion, chopped
3/4 cup full flavored beer
1 (8.5-oz.) jar Dalmatia Fig Chili or Fig Spread
Garlic salt and pepper to taste
Cook bacon in a large pot until very crisp; remove with a slotted spoon and drain on paper towels. Drain all but 1 tablespoon of bacon grease from pot. Add onion and cook for 10 minutes or until translucent, stirring frequently.
Add beer and fig spread and bring to a boil. Reduce heat and simmer over low heat for 10 minutes or until slightly thick and golden, stirring frequently. Stir in bacon and season with salt and pepper; cook until heated through. (Mixture will thicken as it cools.)
