Tangy Apple Bacon Slaw

Make it a main dish by adding diced grilled or roasted chicken. 

Prep time: 15 minutes  

3 tablespoons extra virgin olive oil

2 tablespoons sherry vinegar

1 tablespoon honey

1/4 teaspoon sea salt, or to taste

Freshly ground pepper to taste

4 strips thick cut bacon, cooked crisp and crumbled

1/3 cup minced red onion

1 MODI Apple, cored and cut into small bite-size pieces

1 package tri color coleslaw blend

Stir together oil, vinegar, honey, salt and pepper in a large bowl. Stir in remaining ingredients and toss well to coat. Maybe served cold or at room temperature. Makes 4 servings.
