Parmesan Basil Potato Salad

Chill/cool time: at least 2 hours
1 1/2 lbs. Yukon gold potatoes, cut into 1-inch cubes
1 (6.5-oz.) container Parmesan & Basil Soft Spreadable Cheese
1/4 cup white wine vinegar
1/3 cup diced red bell pepper
3 tablespoons minced red onion
Garlic salt and freshly ground pepper to taste
Snipped fresh basil and shredded Parmesan cheese (optional garnish)
Place potatoes in a large microwave-safe bowl and add a few tablespoons of water to bowl. Cover with plastic wrap and pierce to vent. Microwave on HIGH for 10 minutes or until potatoes are cooked through. Let cool and drain water. Stir together dip and vinegar in a medium bowl. Add potatoes and stir lightly to evenly coat. Stir in bell pepper and green onions, then season with garlic salt and pepper. Cover and let chill for at least 2 hour for flavors to blend. Garnish with basil and Parmesan, if desired. Makes 4 to 6 servings.
