Broccoli Slaw Salad with Creamy Almond Dressing

Keep it vegetarian, or add crisp cooked bacon. Garnish with additional almonds for extra flavor.

INGREDIENTS

1/2 cup + 1 tablespoon Mariani Slivered or Sliced Almonds, toasted

3 tablespoons extra virgin olive oil

3 tablespoons sherry or white wine vinegar

2 teaspoons sugar

3/4 teaspoon sea salt, or to taste

Freshly ground pepper to taste

1 (12-oz.) bag broccoli slaw or 4 cups shaved or very thinly sliced Brussels sprouts

1 cup mixed Naturipe blueberries and sliced strawberries

1/4 cup minced red onion

4 slices cooked, crisp bacon (optional)

 

DIRECTIONS

1.    Place 1 tablespoon almonds, oil, vinegar, sugar, salt and pepper in a small blender or food processor until smooth. 

2.    Place dressing in a large bowl. Add broccoli slaw, remaining almonds, raisins and onions. Toss well to coat. Stir in bacon and garnish with additional almonds if desired. Season with pepper and serve immediately.

 

Recipe tip:

Dressing may be prepared several days ahead and store covered in the refrigerator but it will thicken as it stands. Just before serving whisk in enough water to make it a creamy vinaigrette consistency.
