Corn and Black Bean Salad
This salad does double duty! It’s also great served as a dip with tortilla chips for dipping, or serve over chicken, pork or fish.
Prep time: 15 minutes
Chill time: 1 hour
1 (15.25-oz.) can corn, drained
1 (15-oz.) can black beans, rinsed and drained
1/2 cup 1/4-inch dice red bell pepper
1/3 cup sliced green onions
1/4 cup salsa
3 tablespoons extra virgin olive oil
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
2 teaspoons chili powder
1 teaspoon garlic salt
3/4 teaspoon ground cumin
Stir together all ingredients in a medium bowl. Chill for 1 hour for flavors to blend. Makes 6 servings.
