Crispy Baked Buffalo Chicken Nuggets

Stand time: 20 minutes

Cook time: about 30 minutes

1/4 cup Chobani Plain Yogurt

1 to 2 tablespoons buffalo wing sauce

1 pound boneless, skinless chicken breasts

1/2 cup finely crushed Stonefire Naan Chips (any variety or a mixture of several)

1/2 cup grated Parmesan cheese

Olive oil cooking spray

Preheat oven to 400°F and line a large baking sheet with parchment paper. Stir together yogurt and wing sauce in a medium bowl. Cut chicken into 1-inch pieces and add to yogurt mixture. Let stand for 5 to 10 minutes. Stir together crushed naan chips and cheese in a medium bowl. Roll each chicken piece in mixture and place on baking sheet. Let stand for 10 minutes. Coat liberally with olive oil cooking spray and bake for 15 minutes. Turn and coat with spray again and bake for 10 to 15 minutes more or until crisp and golden brown. Serve with additional buffalo wing sauce or Yogurt Ranch Buffalo Dip. 


Note:
Cook in a single layer in an air fryer to cut down on the cook time.
