BBQ Veggie Walnut Meat Sliders

DESCRIPTION

Walnuts, beans, veggies, herbs and spices are the base for this delicious vegan “meat” substitute. Toss with barbecue sauce and serve on Stonefire Mini Naan Dippers for the perfect game day recipe.

 

INGREDIENTS

2 cups California walnuts 

1 cup rinsed and drained cannellini beans

1/2 cup chopped onion 

1/2 cup shredded carrots

1/2 cup chopped or 1/3 cup riced cauliflower*

1/4 cup olive or vegetable oil

2 tablespoons white wine vinegar

1 1/2 tablespoons paprika

1 1/2 teaspoons dried thyme

1 teaspoon dried marjoram

3/4 teaspoon sea salt or to taste

1/2 teaspoon black pepper

4 cloves garlic, minced

Prepared barbecue sauce

Stonefire Mini Naan Dippers

French fried onions (optional)

 

PREPARATION

1.    Place all ingredients except  naan bread in a food processor. Pulse to chop until walnuts are in very small pieces, stirring and bringing the mixture from the bottom of the food processor to the top to mix evenly.

2.    Transfer to a large nonstick skillet and cook over medium heat for 10 to minutes, stirring frequently, until vegetables are cooked and mixture is lightly browned.

3.    Stir in desired amount of barbecue sauce and spoon between naan dippers. Add a bit of fried onions, if desired.
