Pumpkin Spice Walnut Shortbread

Cook time: 10 minutes

1/2 cup softened butter

1/4 cup packed brown sugar

1 teaspoon pumpkin pie spice

1/4 cup chopped California walnuts

1 cup flour

Preheat oven to 350°F and line a large baking sheet with parchment paper. 

Stir together butter, brown sugar and pumpkin pie spice in a medium bowl, then stir in walnuts. Add flour and mix with a fork or with your hands to form a dough. 

Roll into a 1 1/2-inch log and cover tightly with plastic wrap. Chill until very firm. 

Slice 1/4-inch thick and place on baking sheet. Bake for 10 minutes or until lightly browned.
