Ricotta Waffles

Stick with this simple recipe, or check out the optional stir-ins to make sweet or savory waffles! 

1/2 cup ricotta cheese

1/2 cup milk 

1 egg

1 cup complete pancake mix 

2 tablespoons butter, melted

Beat together ricotta, milk and egg in a medium bowl.  Stir in pancake mix and butter and let stand for 1 minute. Spoon into a lightly greased preheated waffle iron and cook until golden brown. 

Optional Stir-ins: 

2 tablespoons sugar and 1 teaspoon cinnamon

1/2 cup shredded Sharp Cheddar cheese

1/4 cup shredded zucchini (patted dry between paper towels)  

1/4 cup thinly sliced green onion tops

 TIP: To add extra flavor and a bit of crunch, add a large pinch of cheese to the top of  the batter before closing the waffle iron.
