Yogurt Banana Berry Muffins

These muffins come together in no time since the key ingredient is pancake mix. Chobni Zero Sugar yogurt and mashed bananas add a nice sweet flavor and nutrition making them a perfect breakfast or after school snack.

 

Prep time: 10 minutes

Cook time: 20 to 25 minutes

 

1 1/4cups Chobani Vanilla Zero Sugar Yogurt*

3/4 cup mashed banana

1/4 cup vegetable oil

1 teaspoon lemon extract (optional)

2 Happy Egg Company Organic Cage Free Eggs, beaten

1 1/2 cups Complete Buttermilk Pancake and Waffle Mix

1/2 cup scooped and lightly packed fine almond flour

2/3 cup fresh blueberries

1/2 cup sliced almonds

 

Preheat oven to 375°F and line 12 muffin cups with paper liners. Stir together yogurt, bananas, oil and eggs in a medium bowl. Stir in pancake mix and almond flour, then lightly stir in berries. Spoon into prepared cups and sprinkle with almonds, if desired. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.

 

*May substitute 2/3 cup any variety of Chobani Zero Sugar or Less Sugar variety.

 

Leftover Tip:

Layer crumbled muffin with yogurt and fresh berries to make a healthy breakfast parfait.
