Greek Tzaztiki Dip

Prep time: 10 minutes

Chill time: 1 hour

1 cup plain Greek yogurt

3/4 cup peeled, seeded and chopped cucumber

1 tablespoon lemon juice

1/2 tablespoon extra-virgin olive oil

1/8 teaspoon salt

2 cloves garlic, minced

Stir together all ingredients in a medium bowl. Cover and refrigerate for at least 1 hour. Serve with pita chips, or with grilled lamb. Makes about 2 cups.
