Herbed Brie Mashed Potatoes

Prep time: 10 minutes  

Cook: 20 minutes  

3 pounds large cubes red potatoes 

1/4 cup butter

4 cloves garlic, minced

2 (5-oz.) containers Creme de Brie 

1 cup half & half, plus additional if needed

2 tablespoons chopped fresh rosemary

1 1/2 teaspoons sea salt or to taste

Freshly ground pepper to taste


Place potatoes in a large pot with fitted with a steamer basket; add 1-inch of water to pot. Cover and steam potatoes for 15 to 20 minutes or until tender when pierced with a fork. Transfer to a large bowl and mash well with butter, garlic and Crème to Brie. Stir in half & half, rosemary, salt and pepper. Microwave again for a few minutes more to heat through. Add more 1/2 & 1/2 to thin as necessary. Recipe may be doubled. Recipe may also be prepared several days in advance, thinning with additional 1/2 & 1/2 to desired consistency. Makes 10 to 12 servings. 

Make ahead tip: May be prepared up to 2 days ahead and stored tightly covered in the refrigerator. Microwave until hot, adding additional half & half or milk to thin as needed.
