Gorgonzola Mac and Cheese

Cook time: 30 minutes  

3 tablespoons butter

2 tablespoons flour

2/3 cups milk 

2/3 cup chicken stock

1 teaspoon spicy brown mustard

3/4 teaspoon garlic salt

1 1/2 cups shredded sharp Cheddar cheese 

3/4 cup Gorgonzola or blue cheese Crumbles

1/2 cup small elbow macaroni, cooked according to package directions

Freshly ground pepper to taste


Melt  butter in a large saucepan over medium heat. Add flour and cook for 2 minutes stirring constantly. Whisk in milk and broth and bring to a simmer, stirring frequently; stir in mustard, salt and basil. Add 1 cup Cheddar cheese a little at a time, cooking and stirring until melted; stir in cooked macaroni and gorgonzola or blue cheese and cook for 5 minutes more. Makes 6  servings.
