Cauliflower Garlic Cheddar Faux-Tatos

This low carb version of mashed potatoes is just as tasty as the real deal. 

2 large heads cauliflower

2 tablespoons butter

1/2 cup sharp Cheddar cheese

1/4 cup snipped fresh chives

1 1/2 teaspoons sea salt or smoked sea salt

3 oz. cream cheese

4 cloves garlic, minced

Freshly ground pepper to taste

Cut away and discard core from cauliflower. Cut cauliflower into 2-inch chunks. Bring water to a boil in a large pot and add cauliflower; cook for 5 to 10 minutes or until very tender when pierced with a sharp knife. Drain well, then place back into the pot. Mash well then stir in remaining ingredients. Cook for 5 minutes more, stirring frequently. Makes 8 to 10 servings. May be prepared 1 day ahead and stored tightly covered in the refrigerator.
