Speed Scratch Applesauce Muffins

These muffins come together in no time since the key ingredient is pancake mix.

Mashed bananas add flavor and nutrition making them a perfect back to school breakfast or after school snack.

 

Prep time: 10 minutes

Cook time: 20 to 25 minutes

 

1/2 cup Modi apple pulp from making juice

Apple juice or water

2/3 cup milk or plant based milk

1/2 cup sugar

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 teaspoon cinnamon

2 eggs, beaten

2  cups Complete Pancake and Waffle Mix

3/4 cup chopped California walnuts, divided

1/2 cup chopped Modi apple

 

Preheat oven to 375°F and line 12 muffin cups with paper liners. Stir together apple pulp with just enough water to make into an applesauce consistency in a large bowl. Whisk in milk, sugar, oil, extract, cinnamon and eggs until well mixed. Add pancake mix and stir just until combined, Lightly stir in 1/2 cup walnuts and apples. Spoon into prepared cups and sprinkle with remaining walnuts. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
