Quick Indian Lentil Soup

Prep time: 15 minutes

Cook time: 45 minutes

1 tablespoon olive oil

1 heaping cup each: chopped carrot, onion and celery

6 cups vegetable broth

1 cup orange lentils

2 teaspoons curry powder

1 jar Masala or curry simmer sauce


Heat oil in a large pot over medium heat. Add vegetables and cook for 10 minutes or until lightly browned, stirring occasionally. Stir in broth, lentils and curry and bring to a boil. Reduce heat and simmer, covered, for 30 minutes. Add simmer sauce and cook for 10 minutes more. Makes 6 servings.
