Loaded Mashed Potato and Cheddar Soup

Prep time: 15 minutes

Cook time: 40 minutes

1 cup chopped onion

1 cup chopped celery

2 tablespoons butter

3 to 4 cups mashed potatoes

4 cups chicken broth or stock

1 cup milk

1/2 cup sour cream

1 teaspoon herbes de Provence or dried thyme

1 cup shredded sharp Cheddar, smoked Cheddar or Gouda cheese 

Salt and pepper to taste

Cooked crumbled bacon, chives or green onion tops and additional cheese (optional toppings)


Cook onion and celery in butter over medium heat in a large saucepan for 10 minutes to soften. Stir in potatoes, broth, milk and herbs and bring to a boil; reduce heat and simmer, covered, for 30 minutes. Carefully puree with a stick blender or in a blender*. Stir in cheese, salt and pepper and cook until cheese is melted. Top each serving with any other desired toppings. Makes 4 to 6 servings. 

*Let cool slightly and use caution if using a blender. Always hold the lid down covered with a towel. Hot liquid will expand.
