French Onion Soup

Instead of the usual bread and cheese topping, we’re pairing this soup with buttery grilled cheese sandwiches for dipping. 

Prep time: 15 minutes

Cook time:  1 hour (mostly unattended) 

1/4 cup butter

4 medium yellow onions, sliced 1/4-inch thick

2 cloves garlic, minced

6 cups beef broth 

1 cup dry white wine

1 teaspoon dried thyme

Garlic salt and freshly ground pepper to taste

Melt butter in a large stockpot. Add onions; cook over medium-low heat for about 40 minutes or until very soft, stirring frequently. Add broth, wine and thyme and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Season with garlic salt and pepper. Makes 4 servings. Serve with grilled cheese sandwiches for dipping.
