Easy Creamy Mashed Potatoes

Prep time: 10 minutes

Cook time: 15 minutes

4 lbs. Yukon Gold or red potatoes, or a mixture of both

1/4 cup butter

1 cup cream or half & half

1 teaspoon sea salt or to taste

2 (6.5--oz.) containers soft spreadable garlic and herb cheese

Freshly ground pepper to taste


Cut potatoes into 1-inch cubes and place in a large pot fitted with a steamer basket; add 1-inch of water. Cover and steam for 15 minutes or until tender when pierced.  Transfer to a large bowl and add butter; mash potatoes to you liking, chunky or smooth. Stir in remaining ingredients, adding additional cream or half & half if potatoes are too stiff. May be prepared 2 to 3 days ahead and stored tightly covered in the refrigerator. Add extra broth or milk when reheating as potatoes will thicken as they cool. Makes 12 servings.
